The Prinz Salm winery in Wallhausen has been run by the Salm-Salm family for 800 years, making it the oldest family winery in Germany. The winery was first mentioned in documents around the year 1200 and is now run by Felix Prinz zu Salm-Salm and Victoria Prinzessin zu Salm-Salm. Riesling, Pinot Blanc, Pinot Gris and Pinot Noir as well as Merlot are grown on around 19 hectares of vineyards on sandy to clayey-loamy soils on slate or Taunus granite. From 1756, today’s Dalberg Castle in Wallhausen, two kilometers away, was converted into a residence. This building had previously only been used as the administrative seat of the lords of the castle. Michael Prinz zu Salm-Salm was president of the VDP for 17 years. Wine-related events are regularly held in the castle courtyard.
“My family has been cultivating vineyards for over 800 years. Farming sustainably and close to nature is in our DNA. FAIR’N GREEN helps us to develop this further. The holistic approach and external monitoring are key principles.”

Nature, the soil and the vines are at the heart of our daily work. The respectful treatment of them is rewarded with a unique natural product. Wine is not made in the cellar, but out in the vineyard. We rely on the forces of nature, ensuring well nourished soils, vital vines, reduced yields and healthy grapes.
The winery uses traditional methods in harmony with modern cellar technology and an old vaulted cellar. Balanced coolness ensures calm fermentation. The wine is aged for long periods.
