Winery Peter Lauer
The Peter Lauer winery from Ayl an der Saar is now being run by the fifth generation. It focuses 100 per cent on Riesling and the great diversity of this unique grape. It grows in centuries-old, traditional slate steep slopes. Cultivation in the vineyard is natural, as is ageing in the cellar. The wines mature in wooden barrels, which are bottled individually after spontaneous fermentation. Bringing the flavour of our impressive landscape with its mountains, valleys and rivers into the bottle is both a passion and an incentive.

Philosophy
Focusing on one grape variety and still achieving a high diversity of flavours is the highest art. The Peter Lauer winery achieves elegance despite the concentration and depth of the wines through slow and long ageing. The spectrum ranges from extra dry to noble sweet and there is a clear definition of style for each wine.
In the vineyard, the Peter Lauer winery does not use herbicides or poisons against insects or mites. They use the established methods of organic viticulture, but without the use of the environmental toxin “copper”, which kills earthworms and microorganisms in the soil.
Organic fertilisers are used on the mountain. They come from the nearby cattle and horse stables in our village. Heavy machinery has no access to the vineyards, as it unnecessarily compacts the soil and thus restricts the habitat for animals.
