Winery Margarethenhof
The Margarethenhof winery is located in Ayl on the Saar. Jürgen and Dorothee Weber have been running the winery since 1986. The 2020 vintage saw the arrival of son Nicolas Weber (B. Sc. Viticulture Oenology) a new generation with many new inspirations and ideas.
The vineyards are located in equal parts on the Saar and southern Weinmosel rivers. The terroirs of these wine regions could not be more different. The shell limestone soil of the southern Weinmosel produces full-bodied Burgundies and sparkling, animating Elblings. The slate soils of the Saar’s steep slopes produce mineral, multi-faceted Rieslings.
The Ayler Kupp, one of the most exciting slate steep slopes on the Saar, is right on our doorstep. The Margarethenhof winery harvests the grapes for its single-vineyard wines by hand from the best plots with great care.
“We try to bring our terroir and our origins into the bottle in the best possible way. We can only achieve this if we are aware of our responsibility to work in a holistically sustainable way. For us, this means treating everything we interact with with respect, fairness and loyalty. We live from nature and want to protect this great asset so that we can pass on more intact and vibrant vineyards to each subsequent generation. This idea is also reflected in the social and economic aspects of our business. Fair Green offers the perfect platform for this, helps us to make these aspects measurable and is a great sparring partner for us.”

Philosophy
The Margarethenhof winery always aims to bring out the best and most authentic flavours from the Saar and Moselle regions in its wines. Nicolas Weber, who studied oenology, joined his parents’ business with the aim of producing first-class wines. In his debut vintage 2020, he delivered wines that clearly express their origins.
His top maxims are above all time and working close to nature with as few interventions as possible, both in the vineyard and in the cellar. With a love of the craft and a great willingness to experiment, he endeavours to unite tradition and modernity.
