Winery Hans Wirsching
The Hans Wirsching winery in Iphofen has been family-owned since 1630. Dr. Heinrich Wirsching, the charismatic senior boss, built up the largest private winery in Franconia from an insider tip in the 1960s. His daughter Andrea Wirsching now runs the 90-hectare estate with its 35 permanent employees. Silvaner, Riesling and Scheurebe are the estate’s most important wines. However, Burgundy varieties are also becoming increasingly important in a climate that resembles that of Burgundy 40 years ago. The wines are grown on the slopes of the Steigerwald on gypsum keuper, i.e. clayey sediments. In all vineyards, work is carried out as environmentally friendly as possible and the use of insecticides, herbicides and copper is completely avoided.

Philosophy
“As a family business, we think long-term. We love Silvaner and work sustainably.” For the Wirschng winery, a vital and healthy soil is the basis for a good wine. For this reason, glyphosate and insecticides have been completely banned from the vineyards, as have copper and artificial fertilizers. Green strips have been created between the rows of vines to store nutrients and protect the soil from drying out.
In addition, great importance is attached to resistant plants that require less protection. This is why yields are reduced to 60% and the work in the vineyard is done by hand to maintain the ideal ratio of leaves to grapes and to adapt the plants’ performance to the water supply. All this guarantees the high quality of the wines.
