The Baron Di Pauli wine estate consists of two wineries: the “Arzenhof” near Kaltern and the “Höfl unterm Stein” in Söll near Tramin. The winery is one of the most traditional wineries in South Tyrol. It has been in existence for over 300 years and has supplied the court of the Austrian Empire and the Tsar’s court in St Petersburg, among others. Dr Carl Philipp Baron Hohenbühel manages the winery and is also responsible for the merger with Cantina Kellerei Kaltern in 1998. Various grape varieties are cultivated on a total of 15 hectares, including Riesling, Gewürztraminer, Sauvignon Blanc and Merlot. The soils vary depending on the location; at the Arzenhof they lie on sloping moraine debris cones, while at “Höfl unterm Stein” they are characterised as loamy soils on limestone gravel.

Time is a precious commodity. That’s why the winery takes plenty of it. Harvesting only begins when the grapes have reached optimum ripeness. In the cellar, the wine determines the time it needs to develop the elegance and finesse that is its own. The wines are therefore usually released a little later than is usual in South Tyrol. This is when they have reached their inner balance and drinking maturity, which they then retain for many years. Some of the wines offer a remarkable depth of vintage. After all, you also need time to enjoy the wines: give them the attention they deserve!
