Nik Weis Winery - St. Urbanshof

The Nik Weis – St. Urbanshof winery in Leiwen was founded in 1947 by Nicolaus Weis and is now run by his grandson Nik Weis in the third generation. It is known for its outstanding range of vineyards, which cover 34 hectares across the Moselle and the Saar. It is one of the largest privately run wineries in the region. The winery produces 100% Rieslings on slate-rich soils and pays attention to harmony with nature both in the vineyard and in the cellar. The winery uses traditional cultivation methods, such as single-pole cultivation and grape harvesting exclusively by hand.

“For me, FAIR’N GREEN is a modern alternative to the previous sustainability, environmental and ecological audits. My own motto is “Con Natura – Non Invicem”, meaning with nature and not against it. For me, it goes without saying that you can only produce great wines and preserve the wine-growing landscape for future generations if you work with nature and your environment and not against it. This philosophy has not yet been communicated to the outside world through an audit seal or membership of an association.

With “FAIR’N GREEN”, this will now happen in what I believe is the best and most holistic way. “FAIR’N GREEN” is not only committed to protecting the environment and sustainable business practices, but also includes fair, social, societal and cultural coexistence. This takes sustainability one step further.”

The philosophy

The winery is fully committed to the traditional Riesling grape variety and therefore produces wines that reflect the terroir of the individual vineyard site. Traditional cultivation methods are used here, such as single-pole cultivation and intensive manual soil work on the slate-rich soils, which is the basis for the mineral character of the wines.

The winery always ensures low yields and that the harvest takes place as late as possible in order to guarantee a long ripening period and good aroma development. The grapes are carefully harvested exclusively by hand and carried out of the vineyard on their backs in so-called “Hotten”.  The slow and temperature-controlled fermentation in stainless steel tanks and the subsequent maturation in traditional “Fuder” barrels ensure harmonious and polished wines that still taste fresh even after many years.
