The CRASS winery is located in the Erbach district of Eltville and has been run by Matthias Craß since 2014. He expanded the estate and the vineyard area and purchased the historic estate adjacent to the winery in the town center. Here he set up a modern vinotheque and expanded the cellars. The CRASS estate restaurant was also opened in this building in 2016.
The CRASS winery cultivates a total vineyard area of around 9.5 hectares, most of which is planted with Riesling and Pinot Noir. However, Pinot Gris and Sauvignon Blanc are also cultivated here by the CRASS winery. Since 2021, it has also been producing sparkling wine from bottle fermentation: a rosé sparkling wine from Pinot Noir, a Pinot Blanc brut and a single-vineyard Riesling sparkling wine from Erbacher Siegelsberg.

The CRASS winery attaches great importance to vineyard care. This is particularly evident during the grape harvest, as most of the grapes are harvested by hand. This has the advantage that the trained employees can sort out bad grapes so that only the best grapes are processed.
